We are all about reducing waste, right? Why not have some deliciousness while at it? So, you have just made your Breakies for dear Dad’s brunch, and the scraps of bread remained. Do not throw them away! Let’s make something else for Dad with them. After all, we need to fill that brunch table with variety!
1 loaf of holed out slices of bread (White or Brown)
6 eggs, beaten
1 tbsp garlic ginger paste
2 Tomatoes finely chopped
1 onion finely chopped
2 sprigs Coriander
Salt to taste
Oil to cook
- In a pan, cook the onions until translucent. Add the garlic ginger paste and cook until golden brown and fragrant. Add the tomatoes and the salt and cook until you get a thick paste (You can add some milk to stop the mixture from burning). Remove from the heat and set aside in a bowl.
- Using a clean pan, Place a little oil to heat. Put in a holed slice (maybe one or 2 depending on the size of your pan; so long as the slices are flat on the base of the pan, you can place as many as you can)
- Scoop about a teaspoon full of the cooked tomato paste and place (spread out) it in the holes of the bread slices on the pan. Pour your eggs into the hole with the tomato paste to fill the hole to the depth of the slice. Put some coriander on the eggs. Cook until the top looks thickened and not runny and turn over to cook the other side. Your bread should be nicely toasted and golden brown on the side that was on the pan.
- Cook the other side until the bread is golden brown. Remove the bread slices and place on a paper towel/ serviette. Serve hot.
